What I really want to do now is take FULL ADVANTAGE of my newly modded Wii! I've put a few games into my 500GB HDD (which works wonders), but I know I'll never use up all the space. My HDD is in FAT32 format. Would it be possible for me to put in a few emulators? Can you guys suggest the best ones for me?
And are there any other applications that I could use?

I'd recommend the following four emulators: NES, SNES, GBA & Genesis. You can get them through the Homebrew Browser.
And they you should get some UDB loader. cfg, GX & WiiFlow. These three. Just check them out and choose the one you like most. They are free, there's no need to buy a flash cart to use them...
You can put as much games as your HDD with the Wii Backup Manager. Put the ISO at your PC, run the Wii Backup Manager, and it will copy the files you need to your HDD.

Emulators have been suggested, so I guess I should say something about Apps...
WiiMC - The ultimate Wii media center. Streaming? Check. Videos? Check. Music? Check. Images? Check. Must-have. GeeXboX - Similar to the above, but based on Linux which is always a good thing. It is capable of running certain files, such as .mkv's much quicker than WiiMC, but has limited functionality and in my opinion "worse" GUI. WiiEarth - Google Earth on the Wii = feel like you're in Minority Report and spy on your neighbours. Or just look for stuff. WiiXplorer - Manage the content of your drives and the SD card without disconnecting them from the Wii. Handy. WiiVNC - A VNC client for the Wii. Quite useful and very responsive. Linux for Wii in various flavours - Duh!
